Brown Gravy

Ingredients:

6 T. whole wheat flour
2 T. sesame oil
˝ onion, minced fine
or 6 mushroom, sliced
2 C. water or vegetable stock
1 tsp thyme
2 tsp marjoram
1-2 T. tamari soy sauce
˝ tsp. minced lemon peel (optional)

Directions

  1. Roast the flour by stirring in a skillet over medium heat until fragrant, but not browned.
  2. In a saucepan, sauté onion or mushroom in oil.
  3. Add flour, and cook 5 minutes on low heat, stirring occasionally.
  4. Briskly stir in water.
  5. Add herbs and tamari.
  6. Put a flame spreader under the pot, cover, and simmer 20 minutes. Adjust seasoning.
  7. For a very smooth gravy, blend briefly.
