Cinnamon Squash

Ingredients:

1 delicata or acorn squash
(or wedges or chunks of banana, butternut, buttercup or hubbard squash)
cinnamon
sesame oil


Directions

  1. Cut squash in half and scoop out seeds.
  2. Sprinkle liberally with cinnamon.
  3. Rub a covered baking pot with sesame oil.
  4. Place squash in pot with ¼? water, bring to boil on the stovetop, then cover and bake at 375-400º for 45 minutes, or until tender.
