COLORFUL ROOT SALAD

Serves 4

Ingredients:
1 small beet
1 small daikon radish
1 medium carrot

Dressing:
Juice of one lemon
Tablespoon of mustard (various types will do)
2 cloves garlic finely grated
Small amount of water to create the right texture

Directions
1. Grate the roots and mix them in a bowl.
2. Mix the dressing ingredients briskly together and then mix through the salad.
