DATE ALMOND BALLS rolled in COCONUT

The kings of nuts and fruits combined to make a fast, energy snack or dessert.

serves 4-6 as a small dessert

Ingredients

1 Cup almonds
1/2 Cup Medjool Dates, remove pits
Juice and zest of 1 lemon
Pinch of Celtic sea salt
1/4 Cup raw shredded coconut

Instructions: 

  1. In a food processor blend the almonds until they are coarse meal.
  2. Add the dates, lemon juice, zest and salt.
  3. Blend to thoroughly combine.  Taste and adjust seasonings.
  4. Using damp hands form small bite size balls until all of the mixture is used.
  5. Place the coconut on a plate and roll each ball in it to lightly cover them.
  6. Serve at room temperature or chilled.
