Mighty Miso Strengthener

Ingredients:

1/2 cup milet rinsed
1 cup butternut squash, washed (skin left on) and cubed
1 onion, diced
1/2 cup of cabbage, diced
1 medium-sized daikon radish, skin removed and sliced diagonally
6 cups of water (preferably as alkaline as you can get)
brown rice or barley miso, diluted in a little water
(quanity can vary depending on taste preferences)
1-2 stalks of scallion, sliced diagonally, for garnish
1 sheet of toasted nori, cut into strips, for garnish

Utensils:

Fine mesh strainer (to rinse grain)
Medium pot with lid

Preparation:

Heat as killet and add the rinsed millet.

  1. Dry roast on a medium flame for about 5-10
  2. minutes, or until it turns golden color.
  3. Remove from heat and set aside to cool.

  4. Layer the onion, squash, cabbage, daikon and millet in the pot.
  5. Add enough water to just cover the millet.
  6. Cover with a lid and bring to a boil on a medium flame.
  7. Add more water as the millet expands.
  8. Simmer for about 25 minutes or until millet becomes soft.
  9. Add the rest of the water and return to a boil.
  10. Reduce the flame to very low and add the diluted miso.
  11. Simmer for 3-5 minutes.
  12. Mix gently and serve garnished with nori strips and scallion slices.
