Millet "Mashed Potatoes" and Brown Gravy

Ingredients:

2C. millet
1 small cauliflower
¼ tsp sea salt
7 C. water
Extra water for mashing

Directions

  1. Lightly roast millet.
  2. Bring water to a boil, and add millet, cauliflower and salt.
  3. Cover and simmer 25 minutes.
  4. Puree in a food mill or food processor, adding a little water if necessary, for ?mashed potato? consistency.
