Red Lentil Burgers
Ingredients:
2 C. red lentils
¼ C. hiziki (optional)
1 medium chopped onion
2 cloves minced garlic
½ C. chopped fresh cilantro
3 C. water
¼ tbsp dried basil
¼ tbsp dried cumin
1/8 tbsp turmeric
1/8 tbsp thyme
2 tbsp tamari soy sauce
1 tbsp umeboshi vinegar
Directions
- Wash and drain lentil sand hiziki
- In a pot, sauté onion, garlic and cilantro.
- Add lentils and hiziki
- Add water and bring to a boil
- Add spices, tamari and umeboshi vinegar, cover and simmer for 10 minutes.
- Stir and simmer vigorously uncovered for 3 more minutes.
- It will look mushy because red lentils loose their shape when cooking.
- Place lentils in a bowl and into the fridge to cool.
- When cool, form burgers 4 inches in diameter.
- Sprinkle with chopped scallion and serve with brown rice and greens.
- You can toast burgers in a toasted oven or broiler to give them a crispy golden brown outside.
