ROASTED ROOT VEGETABLES

Root vegetables are energizing and stabilizing. This dish is sweet, aromatic, mouthwatering.

serves four as a main dish.

Ingredients:

4 beets, cut into 1- inch cubes
4 parsnips, cut into 1-inch cubes
4 yams, cut into 1-inch cubes
1 red onion, cut in 8ths.
I head garlic
4 tablespoons olive oil
3 tablespoons fresh or dry rosemary, sage and thyme.

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix beets, parsnips, yams, onion and unpeeled garlic cloves in a baking dish.
  3. Sprinkle with olive oil and the herbs and rub the oil allover the vegetables with your hands.
  4. Bake for 35 minutes or until vegetables are tender, stir regularly to avoid burning.
  5. Season to taste.
