Salad Dressing

Ingredients:

½ C. virgin olive oil
½ C. cider or wine vinegar
2 cloves garlic, minced
1-3 tsp chipotle peppers in adobo sauce, pureed
or 1-3 tsp Thai green curry sauce

Directions

  1. Combine oil, vinegar and garlic in a covered jar and shake well to blend.
  2. Add pureed chipotles or green curry sauce to taste, starting with 1 teaspoon.
  3. To serve, drizzle over greens and toss gently.
  4. Makes about 1 cup.
