Winter Simmer

Ingredients:

4 C. butternut, buttercup or banana squash
2 stalks celery
6? strip wakame seaweed
1 onion, cut in 8
¾ C. water
Tamari soy sauce

Directions

  1. Cut open the squash and scoop out the seeds.
  2. Lay flat surface on a cutting board and peel, by shaving with a sharp knife from top to bottom.
  3. Dice in 1? chunks.
  4. Bring water to a boil.
  5. Crumble or cut wakame in small pieces.
  6. Pit everything in the pot. Boil, then cover and simmer 20-30 minutes, until squash is tender.
  7. Season to taste with tamari.
