ZINGY GREEN SALAD

An appealing on the eye blend of uplifting greens with other tasty treats hidden inside.

Serves 4

Ingredients:
1 mild lettuce (i.e. romaine, butter, leaf lettuce or spinach)
2 cups of any combination of the following bitter greens: endive, escarole, dandelion, frisee or radicchio
1 cup arugula
I crunchy apple

Dressing:
Juice of one lemon
1 tablespoons umeboshi vinegar
2 tablespoons toasted sesame oil
1 teaspoon freshly finely grated ginger

Directions:

  1. Chop the greens into bite size pieces and place in a salad bowl
  2. Slice the apples into bite size pieces
  3. Place all the chopped vegetables in a bowl
  4. Combine the lemon juice, umeboshi vinegar, sesame oil and ginger.
  5. Add the dressing to the salad and adjust the flavor to taste.
